Chicken Chorizo Soup

INGREDIENTS:

  • 1 pound diced cooked Chicken Breast
  • Salt and Pepper
  • 3/4 pound Chorizo
  • 2 tbsp Extra Virgin Olive Oil
  • 3 cloves chopped Garlic
  • 1 chopped Red Bell Pepper
  • 1 chopped Medium Onion
  • 6 diced Small Red Potatoes
  • 15oz can of Fire Roasted Chopped Tomatoes
  • 15oz can of drained Dark Red Kidney Beans
  • 1 tsp Hot Sauce
  • 1 quart Chicken Stock

GARNISH:

  • Tortilla Chips
  • Shredded Pepper Jack or Smoked Cheddar
  • Chopped Green Onion
  • Chopped Cilantro or Fresh Thyme

INSTRUCTIONS:

  1. Add olive oil to soup pot and preheat over medium-high heat. Drop in Chorizo and garlic, and cook.
  2. Add peppers, onions and potatoes. Cook 5 minutes, the stir in tomatoes, kidney beans, and hot sauce.
  3. Add chicken stock and bring soup to a boil.
  4. Reduce heat and simmer until potatoes are tender 8 to 10 minutes.
  5. Enjoy!
