INGREDIENTS:
- 1 pound diced cooked Chicken Breast
- Salt and Pepper
- 3/4 pound Chorizo
- 2 tbsp Extra Virgin Olive Oil
- 3 cloves chopped Garlic
- 1 chopped Red Bell Pepper
- 1 chopped Medium Onion
- 6 diced Small Red Potatoes
- 15oz can of Fire Roasted Chopped Tomatoes
- 15oz can of drained Dark Red Kidney Beans
- 1 tsp Hot Sauce
- 1 quart Chicken Stock
GARNISH:
- Tortilla Chips
- Shredded Pepper Jack or Smoked Cheddar
- Chopped Green Onion
- Chopped Cilantro or Fresh Thyme
INSTRUCTIONS:
- Add olive oil to soup pot and preheat over medium-high heat. Drop in Chorizo and garlic, and cook.
- Add peppers, onions and potatoes. Cook 5 minutes, the stir in tomatoes, kidney beans, and hot sauce.
- Add chicken stock and bring soup to a boil.
- Reduce heat and simmer until potatoes are tender 8 to 10 minutes.
