Annual Soup Weekend

Every year I take a long weekend and make soup for the autumn/winter. I started out years ago making two varieties. I’ve worked my way up to six delectable and savory soups and I’m sure next year there will be more! It’s such a treat to come home to ready made soups with leftovers for lunches. Below I have attached the recipes I have amassed so far. Enjoy!

I typically 6x my recipes because we LOVE soup. I freeze them in gallon-sized Ziploc bags with 8 cups of soup in each. You can obviously use whatever size you want depending on your need. I freeze them flat, directly on the freezer shelf, or if I’m low on room I use a cookie sheet so I can lay it across whatever is there. If you do it right, you’ll end up with something that looks like the picture below! Yum!
