INGREDIENTS:
- 1 1/2 cups diced cooked Turkey (**see note below)
- 1/2 cup French-Style Green Beans
- 3 cups Turkey or Chicken Broth (**see note below)
- 1/2 tsp Dried Oregano
- 1 tbsp crumbled Parsley
- 1/4 cup Butter
- 1/4 cup chopped Onion
- 1 tsp Curry Powder
- 1 cup diced Potatoes
- 1/2 cup diced Carrots
- 1/2 cup diagonally sliced Celery
- 2/3 cup Half and Half
- 3 tbsp Flour
INSTRUCTIONS:
1. Melt butter in large pan on top of stove. Add onions and cook until transparent. Stir in curry and cook 2 more minutes.
2. Stir in potatoes, carrots, celery, broth, green beans, turkey, oregano, and parsley. Bring to a boil. Lower heat and simmer for 8-10 minutes or until the vegetables are barely tender.
3. Combine half and half, and flour. Stir in gently until well blended. The soup should slightly thicken up.
4. Enjoy!
** To save time I use a pre-cooked turkey breast, I buy mine at Costco. Also I use “Better than Bouillon” Roasted Turkey Base. It’s way easier than making your own broth. 1 teaspoon of bouillon for 8 ounces of boiling water, so it’s easy to convert to however big a batch you are making. I have found “Better than Bouillon” at Safeway.
